No More Wondering How to Make the Perfect Pizza

In this article, we look at many great strategies for the perfect pizza. Learn from pros and people who have been working for ages to perfect their pie.

1. Changing the game with frozen pizza crust

Frozen pizza crush is typically floppy when it leaves the oven because it has been in the store for a long time, during which it has collected a ton of ice crystals. Once the heat turns on, the ice turns into water and adds excess moisture to the pizza.

Game changers for frozen pizza crust

  • Elevate your pizza by avoiding the use of a baking tray or pan, instead use the oven rack directly or an elevated pan.
  • Man Made DIY also suggests brushing with garlic butter in the last 2 minutes so that the crust can crisp and brown

2. If you want good pizza make your own dough

 make your own dough

The main game changer for pizza is actually not trying to salvage or improve a frozen pizza but to make your own pizza dough.

Making your own dough also allows you to embed your own unique flair into the crust, not to mention adding extras like cheese and stuffed crust.

Mario Batali uses flour, yeast, extra virgin olive oil, and water at 96-98.6 degrees.

3. What separates great and legendary pizza is the water
Use filtered water to create New York pizza

It is well known that some of the best pizza comes from Naples, Sicily, and New York.

Both Mario Batalli and a writer at Pur agree that water is huge when it comes to replicating great tasting pizza from around the world. This is especially true because the dough contains water that facilitates the mixture of flavours between sauce, topping, and cheese to bring new and heightened flavours. That is why quality water is so important for pizza.

This means that serious pizza makers should consider a water filtration system if they're looking for the perfect pie.

4. Store your dough for up to 3 days

Based on tests by Food Lab, storing and cold fermenting dough can increase its flavour and texture. Results point to a peak after 3 days, so get started early on that perfect pizza. Use a fridge or temperature controlled storage room for optimal results.

5. Restaurant style flavour with olive oil poached ingredients

Poaching your ingredients with olive oil makes your ingredients pop with flavour and gives great visual aesthetics also.

6. Less is more when it comes to toppings

Pizza master chefs warn that you should avoid adding too many toppings, make sure there is lots of space for the dough and sauce to show through. Choose 2-3 ingredients and don't over-do the cheese as the final topping.

7. Use raw tomatoes in your sauce

Use uncooked tomatoes in your pizza sauce
The secret to restaurant level pizza sauce, says Cheat Sheet, is to use uncooked canned tomatoes for the sauce. The most common mistakes in making pizza sauce are accidentally using pasta sauce or cooking your crushed tomatoes.

8. Kick up the flavour with thinly sliced garlic

Adding additional flavour and boldness to your pizza is a great way to perfect your homemade pizza or to truly animate a frozen pie. Founders of Mimi Cheng's suggest adding thinly sliced garlic before putting it into an oven.

9. Make sure the oven is HOT

Use a hot oven for best pizza
Food Labs points out that the pizzeria's pizza is usually better because their ovens tend to hotter than the conventional kitchen's. This is because the temperate helps better push out the difference between crisp and fluffy which are two of the great things about a pizza. Learn about the chemistry with Food Lab's article.
Make sure to bring your oven to at least a 550 F or use a skillet-boiler approach for even more precision.

10. Finish with hand torn herbs

The most traditional way to make pizza is to hand tear some fresh herbs over the pizza. Batalli notes that a grandma would never use a knife to hack her herbs - tear them instead so that the herbs don't get bruised.

Great pizza doesn't have to be complicated, but the final result is always worth the work. So whether it is adding a bit of garlic or finding the ideal water filter to create a symphony of flavours, pizza at its heart is great comfort food to share.
